You will enjoy the aroma that fills your house while this super easy roasted chicken main dish is cooking.  A savory combination of olive oil, balsamic vinegar, garlic and rosemary perfectly paired with chicken and plumped dried cherries.


8 pieces chicken (breasts, thighs, or any combination)

1 T fresh rosemary

1 T minced garlic

1/2 cup olive oil

3 T balsamic vinegar

6 oz Benjamin Twiggs Unsweetened Dried Cherries




Soak the dried cherries in 1 cup of warm water to plump them.  Preheat oven to 400 degrees.

Place chicken in a heavy pan.  Sprinkle the rosemary on the chicken, covering evenly.

Drain the cherries.  In a separate bowl, whisk the olive oil, balsamic vinegar, salt and garlic together.  Add the dried cherries and stir until the cherries are coated.  Pour into pan over the chicken.

Roast for 45 minutes.
