Dried cherries, spinach and quinoa combine to make a tasty and protein-packed side dish or light meal.  Easy to prepare.  For a variation, add your favorite in season vegetables or chicken.  You’ll make this one over and over again!


3 T extra virgin olive oil

3 T apple cider vinegar

1 T honey

1/4 t salt

1/4 t pepper

2 C quinoa, cooked

1 C chopped fresh spinach

3/4 C Benjamin Twiggs Dried Cherries, or Benjamin Twiggs Unsweetened Dried Cherries, chopped

1/2 C crumbled goat cheese

1/2 C cucumber, chopped

1/4 C sliced almonds


Mix olive oil, vinegar, honey, salt and pepper in a small bowl to create dressing.

In a large bowl, combine remaining ingredients.

Stir dressing into the quinoa mixture.

Serve.  Refrigerate unused salad.
