We added a little Traverse City to a traditional pumpkin bread recipe and it is outstanding! The sweetness of plump, dried cherries along with the crunch of chopped walnuts takes it to another level. Five stars
1 1/4 C Sugar
1 t Baking Soda
1 2/3 C flour
1/2 t cinnamon
1/2 C walnuts, chopped
1/2 C Vegetable Oil
1/4 t Salt
1/2 t Nutmeg
1 C Canned Pumpkin
Grease and lightly flour 9x5x3 loaf plan. Preheat oven to 350 degrees.
Combine eggs, oil, 1/3 cup water and pumpkin.
In a separate bowl, stir together flour, sugar, baking soda, nutmeg, cinnamon and salt.
Beat dry ingredients into pumpkin mixture, gradually.
Stir in nuts and dried cherries.
Pour into pan and bake for 1 hour or until toothpick inserted comes out clean.
Allow to cool before slicing.
