Roasted cherry balsamic carrots are a tasty side dish. This recipe includes Traverse City cherries which make a delicious flavored glaze. Prep time is minimal and they are easy to make and easier to eat! Try the recipe with just carrots or add other vegetables such as cauliflower, brussels sprouts, onions, snap peas, potatoes, squash or zucchini.
1 pound Baby Carrots
2 T Olive Oil
1 T butter, melted
1 t Balsamic Vinegar
1/4 t Ground Mustard
Preheat over to 375 degrees F. Lightly spray a cooking sheet with nonstick cooking spray. Place carrots on cooking sheet.
In a medium bowl, whisk together all remaining ingredients. Pour mixture over carrots and toss until coated, then line carrots in a single layer.
Bake for 30-45 minutes until fork tender (stir at 20 minute mark). If more caramelization is desired, roast longer.
Serve immediately. Serves 4 people.
Try this with other vegetables such as brussels sprouts or squash. Yum!
